"German beer balance bliss" is how our head brewer summed up this collaboration with Fox Farm Brewery (CT).
It's a timely new release, just on the heels of our Kolsch. Altbier is Kolsch's stylistic spirit animal. Both styles hail from cities in the same region in Germany (Koln and Dusseldorf, respectively), just a short train ride away from one another.
Altbier and Kolsch are both lager-like in character, though technically ales, fermented with a similar yeast that likes to hang at lower temperatures. However, that's where their similarities end. Altbier could be considered an assertively hoppy style right alongside German Pilsner. It's amber in color and packed with herbal and spicy hop character, whereas Kolsch is light in color, with a fruity yeast profile and champagne-like dryness.
Teaming up with Fox Farm, we were able to successfully replicate one of our favorite interpretations of this traditional style. Stasis has substantial malt character, and is dry and surprisingly hoppy with a fruity finish. A total of two months of aging, including one month of foudre fermentation, allowed the yeast to settle out while imparting signature Threes character. Partnering with a brewery we greatly admire and respect on this beloved style was an absolute pleasure.
